This is my favourite breakfast of all time. It is the most important meal of the day and packed full of Omega, Fibre and Superfoods! I have layered the bircher muesli with a Strawberry Chia Jam and topped with a Superfood Sprinkle for some extra crunch. This bircher muesli is my go-to recipe and will keep you satisfied until lunch time. It is delicious on its own, topped with grated apple, frozen berries, fresh fruit, granola, nuts, seeds… whatever tickles your fancy!
½ cup oats
1 tbsp flax seeds
1 tbsp sesame seeds
1 tbsp pumpkin seeds
1 tbsp sunflower seeds
2 tbsp dried cranberries
2 tbsp almonds (chopped lengthways)
½ tsp cinnamon
½ grated red apple
½ cup milk of choice (soy milk, almond milk, rice milk etc…)
¼ cup natural yoghurt
1. Combine all ingredients in a bowl. Mix well and leave overnight in the fridge to soak.
2. In the morning, add a splash of milk and mix well.
3. Top with fresh fruit, granola, nuts, seeds or whatever you feel like!
