It looks like chocolate ice-cream, it tastes like ice-cream, and it feels like ice-cream. BUT… it’s not actually the “ice-cream” you are thinking of. It’s smooth, creamy, chocolatey, just how ice-cream should be, and the best part is that it is absolutely guilt-free! Make this for your loved ones and they will devour it without knowing it is healthy, haha! This is raw, vegan, sugar-free, dairy-free, gluten-free and it’s DELICIOUS! Sneaky Squirrel! 😉
½ cup medjool dates
1 ripe avocado
1 ripe banana
½ cup coconut milk (full cream)
3 tbsp raw cacao powder
3 tbsp raw cacao nibs
1. Place dates into a food processor and process until it becomes a smooth sticky date paste.
2. Add the rest of the ingredients into the food processor except for the cacao nibs and process until smooth and creamy.
3. Mix in cacao nibs
4. Pour into container and freeze overnight. This is also delicious semi-frozen in the freezer for a few hours.
5. When ready, let it defrost for 5-10 minutes before scooping. Enjoy your “ice-cream”!
