Cinnamon spiced amaranth porridge with caramelized honey figs and walnuts. This porridge is perfect for the cold wintery days and the colours remind me of the Autumn months. The amaranth flakes provide an extremely creamy texture and it is perfectly spiced with cinnamon. The combination of flavours are a match made in heaven and will also give you a nutritional boost for the day! I love porridge, even living in the hot summer desert, I still crave a delicious comforting porridge which gives me a warm and fuzzy feeling inside.
Ingredients:
1 mashed ripe banana
½ cup amaranth flakes
1 cup milk of choice (soy, almond, rice milk etc.)
½ cup water
¼ tsp cinnamon
3 fresh figs (sliced)
½ tsp coconut oil
Drizzle of honey
⅓ cup chopped walnuts
Directions:
1. Add all ingredients except for the figs, coconut oil and honey into a pot and simmer for approximately 10-12 minutes. Stir occasionally until a smooth and creamy texture is formed.
2. Meanwhile, heat coconut oil in a separate pan Add sliced figs and cook for 1 minute on each side.
3. Add walnuts and drizzle honey over the figs. Cook for another few minutes until caramelized.
4. Place caramelized honey figs and walnuts on top of the amaranth porridge and serve.
