Easy Chocolate Cake

Yep, you heard right! It only took 2.5 minutes to cook in the microwave and it’s a soft, spongy, springy chocolate cake πŸ™‚ I have layered the cake with my delicious raw chocolate mousse. Recipe here
Be creative and layer with a coconut or cashew cream, top with fresh berries and you have a super yummy cake. Trick your friends into believing that you have been baking for hours! πŸ˜‰

    Amazing! Trying this today but is there anything I can use as a substitute for almond meal? I know I can make my own almond meal by grounding up almonds, but would ground walnuts/pecans or PB2 or oat flour work as well?

    I just made this as four cupcakes and substituted with LSA meal and wholemeal flour and they turned out great! Topped with a little 70% dark chocolate and fresh raspberries πŸ™‚
