I was really surprised with how these popsicles turned out! I love the slightly tangy taste of kiwi-fruit, which is perfectly balanced with the sweetness of bananas. What a delicious Summer treat! It’s cool, it’s refreshing, smooth, creamy, sugar-free, dairy-free and guilt-free… you won’t believe it’s HEALTHY! Great for kids too, for when they scream: “I want ice-cream!!”. Sneaky sneaky! This is the perfect Summer treat and will definately get me through the hot sunny days in Dubai!
Makes 6 popsicles.
2 ripe frozen bananas
1 ripe avocado
2 ripe kiwi fruit
⅓ cup coconut milk
2 tbsp agave syrup or maple syrup
1. Place all ingredients into a food processor and process until smooth.
2. Fill popsicle moulds with the green fruity mixture and freeze overnight.
3. Pop out of the moulds and let defrost for approximately 5 mins to remove icy texture before eating.
4. Wow! Yes – it really is that simple!
